We had originally called this van The Dink because we had colleagues that kept calling us Dinks when they saw our photos of our adventures with our van. But after a trip on Quebec North Shore, we had stopped at Pointe-Noire lookout near Tadoussac QC for the evening, and we had the opportunity to see a dozen belugas swimming from the Saguenay River to the St-Laurence. We had found that moment so magical that we were inspired by how easy they were to spot just our big, white van... LOL

Since we built the van and used it on multiple road trips, here are things we love/plan on changing or have already changed that we have done to our set-up after using it for 2 years.
We love having two water systems, 20L drinking and 40L non-drinking. Having the two systems in the van makes filling up our water simpler. We notice we use more water to wash dishes, clean, shower... than our drinking. Finding non-drinking water is much easier.
We no longer use the electric kettle and have never used the induction cooktop. We stopped using the electric ketal and induction cooktop for two reasons. The first boiling water with a JetBoil is much faster, and the second it allows us to boondock longer without the need to recharge our batteries. We use a butane/propane stove for cooking, and it works great.
We currently have an AGM battery system for auxiliary/house power in our van. If I were to rebuild today, I would have gone with a lithium-heated battery system with the advancements in technologies. I will upgrade to it in the upcoming years, but currently, the AGM is working great. (I am looking at a heated lithium battery system because we use the van in winter. If you don't have a heated lithium battery, it will not charge or damage the battery when it's below freezing.)
We love having a 12v Fridge vs a cooler. I would pick a fridge freezer dual zone if I were to start over. We may upgrade later, but for now, it's the job. ( We would upgrade to have the ability to have frozen food, ice for drinks, popsicles... )
PRO-TIP: if you plan to build a van and sleep sideways in your van, I would strongly recommend having your head placed on the driver's side. We made the error of putting it on the passenger side. When you're parked on the side of the road, your van will always be higher on the driver's side. Roads have a slop to them to let the water runoff. (2 levelling blocks can fix that issue if you put your head on the passenger side.)
I love the dry heat of our diesel heater in the colder months. We have had a few issues with it, but it was all due to installation errors, and it was easy to fix and get it working properly. To avoid carbon build-ups and take it apart every season to clean it, we have noticed that putting it on high for 10-30min+ helps clean the unit after long usage days.
We love our rear door ski rack/summer chair holder. It is a simple modification which allows us to bring comfortable chares with us to spend the night outside with friends by the fire during summer and during winter, it's a safe place to store our ski's
The Toilet: We originally had a chemical toilet which a friend had given us, and after using it three times, we bought a composting toilet. They are much easier to empty, clean, maintain. (My wife would not clean or touche the old chemical toilet, but this one, she doesn't mind emptying it.)
We upgraded the rear/outdoor kitchen cabinets from plastic bins to a custom wood draw system with DIY chloroplast dividers. It's been a game-changer; we have functional storage compared to before.
Battery monitor: I have upgraded from a generic Bluetooth battery monitor to a Victron Smart Shunt + a raspberry pie running the Victron operating system. This allows me to remotely monitor the auxiliary/house batterie and the car battery when the raspberry pie is connected to wifi or my hotspot. ( This has given me more peace of mind when skiing, that everything is ok and that my furnace is working, ensuring my water dos not freeze )
